Carrot Kosambari (carrot salad with tadka)



Ingredients:

Carrots - 3-4
Cilantro - 4-5 sprigs
Lemon - 1

Green chillies or Jalapenos - 2
Salt to taste

For tadka:

M
ustard seeds - 1/2 tsp
Urad Dal - 1 tsp
Asafoetida (a pinch)

Turmeric Powder- 1/2 tsp
Preparation:

1. Grate Carrots and keep aside.
2. Slit green chillies into halves
3. In a kadai, heat 1 tsp oil. Add mustard seeds. Let it splutter. Add urad dal turmeric and the slit green chillies. Fry till urad dal is light brown in color. This is the tadka.
4. Add this tadka to the grated carrots.
5. Add salt and the juice of 1 lemon. Mix well.

A healthy tasty carrot salad is ready.
